After lots of lovely British rain a glimmer of sunshine and heat through my kitchen combined with a big juicy mango sitting in my fruit bowl was my inspiration for this smoothie. Amazing tropical flavours , creamy and delicous.
Would also be great made into ice lollies!
On the whole I think you want to be careful having too many smoothies packed to the brim with lots fruit, as although fruit has wonderful health benefits, overloading your smoothie with fruit and then drinking quickly is still a massive fructose hit and will certainly give your blood sugar a roller coaster ride. So like most things, moderation is key. I do however exclude berries from this as their sugar content is much lower so has a smaller impact on blood sugar, plus they are brimming with antioxidants, so eat, juice and smoothie away!
In this smoothie I have combined mango and banana with lots of added coconut which gives not only a delicious flavour but also an important boast of protein which helps to level out any blood sugar spike, as well as providing an extra energy kick, and being highly nutritious.
Mango is possibly one of the best tasting fruits of all time and its lovely vibrant yellow colour indicates its contain lots of beta carotene, which converts on demand to Vitamin A, a crucial nutrient for healthy skin, eyes and reproductive health. Freshly cut mango is also high in Vitamin C. Mango and lime are such a great pairing and I love the addition of mint, I added a banana to this smoothie as I thought it it improved both the taste and the texture but as always feel free to be play around with the ingredients, there are no rules.
This would be a perfect mid afternoon pick me up and you certainly won’t be hungry for while. Or between you and me the addition of rum would also turn it into a great summer cocktail!
- 1 large ripe mango
- 1 small banana
- 3 tbsp designated coconut
- Juice of half a lime
- 10 mint leaves
- 200ml coconut water
- 8 ice cubes
- Peel and chop the Mango and banana
- Add all the ingredients to a high speed blender with 4 cubes of ice
- Blend on high speed until completely smooth and liquidized may take a few minutes.
- Add the remaining 4 ice cubes and blend for further 10 seconds
- Pour into glass and serve, particulary good with seeds scattered on top.
Between you and me the addition of rum would also turn it into a great summer cocktail!
