Chia seed energy balls
Recipe type: snacks
Serves: 25 approx
  • 75g Cashew nuts
  • 75g Hazelnuts
  • 100g Seeds (Chia, sesame & flax)
  • 250g Medjool dates (stones removed)
  • 2 heaped Tbsp Almond butter
  • 2 Tbsp Ground flaxseed
  • 75g coconut oil melted
  • 60g Raw cacao powder
  • For the coating:
  • Sesame seeds
  • Freeze dried raspberries
  1. Place the nuts in a food processor until finely chopped.
  2. Add the seeds and pulse until combined with the nuts.
  3. Add the Medjool dates, almond butter, cacao powder and coconut oil.
  4. Blend until all well combined and mixture starts to form a dough.
  5. Empty contents of blender into a bowl.
  6. Using your hands roll the mixture into bite size balls.
  7. If you are using freeze dried raspberries and sesame for a coating, place in a bowl or on a small plate then roll each ball to coat it.
  8. Place the balls in the fridge to chill for 30 minutes. They are then ready to serve, alternatively they can be kept in the fridge for up to a week.
