Raw Chocolate Fudge Squares
Recipe type: Sweet Treats
Serves: makes 24 squares
  • 250g Brazil Nuts (alternatively you can use, Almonds, Walnuts, Cashew Nuts, Pecans depending on what you have in your cupboard, feel free to use a selection or just one)
  • 200g Dried apricots (Organic or no added Sulphite)
  • 2tbsp ground flaxseed
  • 80g Pecan Nut butter (Almond, cashew, Walnut, Brazil nut could also be used)
  • 60g Coconut Oil or clarified butter (melted)
  • 60g Raw Cocoa Powder
  • Designated coconut for coating (optional)
  1. Place the nuts in a food processor and process until fine, add the rest of the ingredients and process until it starts to form a dough, you might need to ‘pulse’ the food processor to make sure everything is fully combined.
  2. Line an 8inch square tray bake with paper and pour the mixture in pressing down with your fingers untill it is well compacted and smooth.
  3. Sprinkle the coconut on top and place in the freezer for a couple of hours.
  4. When completely chilled you can cut it into squares. The squares will happily keep in the fridge for 4 or 5 days.
  5. If you would like to make balls instead, empty mixture into a bowl and put the designated coconut into another bowl or plate. Place a spoonful of the mixture in your hands and roll it into a ball shape, you might find it helpful to wet the palm of your hand, when it forms a ball shape roll it in the designate coconut until it is well covered.
