These indulgent treat are very dangerous as if you are like me and a natural greedy guts they will disappear very quickly! I’ve just had to hide the batch I made otherwise I will have consumed the whole lot. They taste deliciously chocolately with a fudgy texture, yet the good news is they contain no sugar and are very healthy packed full of nuts, this time I used brazil nuts which are very high in selenium a crucial mineral for thyroid support, fertility and a fabulous antioxidant. Our soil is no longer as rich in selenium as it should be so we are not getting nearly enough from vegetables as we need, therefore brazil nuts are a great way of giving a bit extra of such a crucial mineral. It is very important you use dried apricots, that are either organic or have not had any sulphites added, they should be brown and not orange, the taste is so much better too, once you have tried authentic brown you will not being going back nasty processed orange ones, the taste is so much more delicious, almost like treacle. The reason I use raw cocoa powder in this recipe is it is full of fibre and a good antioxidant so has so many health benefits, as well as giving a great chocolate taste. These fudge balls also have a great balance of essential fats Omega 3 and Omega 6, its amazing something so healthy can taste this good! I have made these into squares but they are also delicious rolled into balls like truffles, so do whichever way you prefer. The balls will be slightly more time consuming so if you are feeling lazy I would stick with the squares!
- 250g Brazil Nuts (alternatively you can use, Almonds, Walnuts, Cashew Nuts, Pecans depending on what you have in your cupboard, feel free to use a selection or just one)
- 200g Dried apricots (Organic or no added Sulphite)
- 2tbsp ground flaxseed
- 80g Pecan Nut butter (Almond, cashew, Walnut, Brazil nut could also be used)
- 60g Coconut Oil or clarified butter (melted)
- 60g Raw Cocoa Powder
- Designated coconut for coating (optional)
- Place the nuts in a food processor and process until fine, add the rest of the ingredients and process until it starts to form a dough, you might need to ‘pulse’ the food processor to make sure everything is fully combined.
- Line an 8inch square tray bake with paper and pour the mixture in pressing down with your fingers untill it is well compacted and smooth.
- Sprinkle the coconut on top and place in the freezer for a couple of hours.
- When completely chilled you can cut it into squares. The squares will happily keep in the fridge for 4 or 5 days.
- If you would like to make balls instead, empty mixture into a bowl and put the designated coconut into another bowl or plate. Place a spoonful of the mixture in your hands and roll it into a ball shape, you might find it helpful to wet the palm of your hand, when it forms a ball shape roll it in the designate coconut until it is well covered.
